True Eats: Baked Oatmeal with Bananas and Nuts

Yes, your eyes are not deceiving you…this oatmeal was baked.  And it was damn good too!

 

It seems so obvious… I mean I love oatmeal raisin cookies; who doesn’t?  But baking oatmeal for the sole purpose of eating it baked never occurred to me until Joy who came to the same revelation shared her recipe on her blog.  So I thought I’d try it out, and was pleasantly surprised.  I did modify the original recipe to have less sugar, and lowered the cholesterol hit by opting for egg whites instead of a whole yolk.

 

I popped the mixture in the oven, washed my hair and 20 minutes later was happily stuffing my face with spoon after spoonful of pure bliss.  Can't wait to make the next batch!

Baked Oatmeal 

Serves 4

 

Ingredients

1 1/2 cups old fashioned oats

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk (Silk almond milk works great)

1/4 cup melted butter

5-6  egg whites

splash of vanilla extract

handful of dried cranberries (I used raisins)

1/2 banana sliced, milk and almonds for topping

 

Equipment

2 medium sized bowls for mixing

1 9″ pan

Pam (or any cooking spray)

 

Method:

Preheat the oven to 350 degrees.

In one bowl mix together baking powder, and salt.  In the other mix together the milk, butter, egg whites and vanilla.  Combine the wet and the dry until fully mixed.  Fold in dried fruits, and save the nuts for topping later.

Pour your mixture into the pan and bake for 20-25 minutes. Remove and let cool for 5 minutes.  Although I have it photographed on a plate I would served it in a bowl warm or at room temperature topped with your choice of warm or cold milk, fruits (banana in this case) and nuts.
